"I would like to suggest the ability to enable / disable certain payment options on a customer-by-customer basis. For instance, let's say you have a certain customer that has used the "Pay In Store" payment option on several card order and has repeatedly not picked up those orders. It would be really hand to just be able to disable that particular payment option for that individual. That way they can still order cards online but, it's cash upfront.

this would also work well with the "on account" payment option. Most clients have this disabled, as it allows customers to put items on their tab. restricting it to only customers you approve would increase the usability of this often permanently disabled feature.
